The Brisket is made up of 2 muscles, the point (fattier thicker end) and the flat (leaner thinner end. We trim if for you before weighing, and you can take either side or have it whole!

Seasoning: Rub the brisket generously with a blend of salt, pepper, paprika, garlic powder, and onion powder. For a barbecue-style brisket, you can add a bit of brown sugar to the rub.

- Smoker: Smoke the brisket for 10-12 hours, depending on the size, until the internal temperature reaches 195-205°F (90-96°C) for tender, juicy results.
