Raised on open pastures, this lamb delivers a rich, earthy flavor and is ideal for roasting or grilling. The delicate texture and beautiful presentation make this rack of lamb an impressive centerpiece that’s both simple to prepare and guaranteed to please.

 

We recommend 3-4 bones per person. We can also prepare as a crown roast, or individually cut chops.

    • Preheat your oven to 425°F (220°C).

    • Seasoning: Rub the rack with olive oil, and season generously with salt, pepper, and herbs like rosemary, thyme, and garlic. You can also coat the lamb with a Dijon mustard and herb rub for added flavor.

    • Searing: In a hot skillet, sear the rack of lamb on all sides for 2-3 minutes per side until browned.

    • Roasting: Transfer the seared lamb to a roasting pan, fat side up, and roast for 15-20 minutes for medium-rare, or until the internal temperature reaches 125°F (52°C). For medium, roast until the temperature reaches 130°F (54°C).

    • Resting: Remove the lamb from the oven and allow it to rest for 10 minutes under foil before carving. This will ensure the lamb remains juicy and tender.

    • Carving: Slice between the bones to create individual chops for serving.

    • Crust Option: For a flavorful crust, mix breadcrumbs with herbs, garlic, and olive oil, and press it onto the lamb before roasting.
    • Sauce: Pair with a classic mint sauce or a rich red wine reduction for an extra burst of flavor.
